  1. Cook the onion and garlic in a large covered pan, over a low heat for a few minutes. Add the vegetables and chicken, along with a little water. Turn up the heat and cook for about 10 minutes, stirring regularly and adding a little more water as needed.
  2. Meanwhile, make the sauce in a separate pan. Add some of the coconut milk to a pan over a medium heat, and gently stir in the spices, ground almonds and coriander. You may not need all the coconut milk, but add at least 3/4 of the can. Keep the rest in case you need to add more liquid later. Let the sauce heat through gently for a few minutes.
  3. Pour the sauce over the "chicken" and vegetables, stir together and turn the heat down low. Cover the pan and cook for about 15 more minutes, stirring occasionally.
  4. Serve with rice or naan :)
